Oat Almond & Broccoli Patties

This recipe is courtesy of Vegan Food & Living magazine, although I swapped broccoli for spinach as I did not have any and they worked perfectly.

1 small head of broccoli
1 small onion
1 garlic clove
1 tsp olive oil
60 g ground almonds
45 g chickpea flour
50 g oats
Salt and pepper

Serves 4-5

Heat the oven to 180º.   Put the broccoli, onion and garlic into a food processor and blitz until the vegetables are finely chopped. 

Add the almonds, oats, oil and a good grind of salt and pepper and blitz again, until well combined.   I removed the blades so I could tip in the chickpea flour and mix well, until you have a dough type mixture.

Cover a baking try with parchment paper.   Divide the mixture into even sized portions and shape into a round patty about a centimetre deep and place on the baking tray.

Bake in the oven until browned and cooked through, about 25-30 mins.

The patties make a great burger replacement and I served them on Pugliese puccia bread, with roast slices of aubergine and tomatoes, with a spicy red pepper sauce.
